La D.O. Cava es una de las denominaciones de origen españolas más singulares, ya que no corresponde a una única región continua. Aunque su núcleo histórico se encuentra en Cataluña y especialmente en el Penedès, también existen municipios autorizados en otras partes de España. Actualmente se estructura en cuatro grandes zonas: Comtats de Barcelona, Valle del Ebro, Viñedos de Almendralejo y Requena.

Para que un vino pueda comercializarse como Cava D.O., debe elaborarse mediante el método tradicional, en el que la segunda fermentación se realiza dentro de la propia botella. Es este proceso el que genera de forma natural sus características burbujas.

La D.O. diferencia los Cavas principalmente por su tiempo de crianza. El Cava de Guarda requiere un mínimo de 9 meses; el Reserva, más de 18 meses; el Gran Reserva, más de 30 meses; y el Cava de Paraje Calificado, más de 36 meses. Las tres últimas categorías pertenecen al segmento Guarda Superior.

También se clasifican según su contenido de azúcar, desde Brut Nature (0–3 g/l) y Extra Brut (0–6 g/l) hasta Brut, Extra Seco, Seco, Semi Seco y Dulce.

It is the reward for the effort, ingenuity, and creativity of a group of producers and winegrowers from the mid-19th century who, after being challenged by phylloxera, decided to start anew. But it is also a reward for those who continue to toast and celebrate with bubbles, those of the traditional method, those of Cava, which, with perseverance and rigor, improves year after year in quality and international recognition.

It all began as great stories often do, in a small place with a rich winemaking tradition, a land of farmers, but also of people with a thirst for knowledge and a desire to explore; and with three white grapes as its protagonists: Macabeu, Xarel·lo, and Parellada. A trio that began to define and differentiate the sparkling wine that, over the years, would be known as Cava.
