Old goblet-trained vineyards, grown in strict dry farming conditions, have withstood the hot summers. Vines planted in 1950 on the high plain at 740 metres above sea level, on poor calcareous clay soils also known as ‘Calar’. Vineyards located in the highest areas of our PDO, in the Sierra del Peral at 850 metres above sea level, planted on clay-rich quartzite soils known as ‘Rubial’. These soils define the character of our wines.
Concentration and strength from Rubial. Power and elegance from Calar. Abundant complexity.
The Sun, which helps the vines grow and ripens them throughout the year, is our ally.
The Man who tills the land cultivates the vines with passion. When veraison arrives and the grapes begin to change colour, he must make the difficult decision of which grapes to leave to ripen and which to remove. Only one bunch per cane, to achieve excellence in the final product.
And on the exact day, we harvest the bunches in small boxes during the early morning hours.
We select the destemmed, uncrushed grapes, separating the berries that are perfectly ripe from those that have been sun-scorched. From a single bunch, two types of grape and two types of wine.
We combine technology and tradition, knowledge and artistry, but above all, we are passionate about doing things well.
