A.O.C. Chablis
The A.O.C. Chablis lies in northern Burgundy (France) and produces exclusively white wines from Chardonnay, known for their freshness, acidity and marked mineral character.
The secret of the terroir: Kimmeridgian soil
The unique character of Chablis comes from its soil, known as Kimmeridgian. It is a geological formation from the Jurassic period made up of limestone, clay and millions of marine fossils (small oysters called Exogyra virgula). This soil gives the characteristic electric acidity and the mineral notes reminiscent of limestone and the sea.
Chablis has different classification levels that reflect the quality and origin of the vineyards:
Petit Chablis: fresh, light wines from the outermost areas of the region.
Chablis: the general appellation, representing most of the region.
Chablis Premier Cru: higher-quality wines from specific vineyards recognised for their excellence.
Chablis Grand Cru: the pinnacle of quality in Chablis, with only seven vineyards located on a sunny hillside north of the town of Chablis.
