The use of the whole bunch in a small proportion suggests menthol and balsamic. The black pepper evokes the time in the barrel, for 16 months.
In the mouth it combines a fresh entry, due to the sand of part of the vineyard soil, with a persistent sensation throughout the palate, due to the clay part. On the palate, pleasant texture, a reflection of the care taken with the fruit throughout the production process. In the aftertaste, the fruity sensation and well-integrated acidity, due to the height at which the vines are located, make the finish longer and more complex.
Dominio del Pidio is a red wine from Ribera del Duero that reflects the essence of the old vineyards and the tradition of the area. Made mainly with Tempranillo, it comes from selected plots that provide concentration and complexity.
On the nose it offers aromas of ripe black fruit such as blackberry and plum, accompanied by spicy, toasted notes and an elegant mineral background. In the mouth it is structured but balanced, with fine tannins, good acidity and an enveloping texture.
Its barrel aging provides nuances of vanilla, cocoa and light toast, integrated with the fruit. The finish is long, persistent and elegant, ideal to accompany red meats, roasts or cured cheeses.
