Tasting notes

Appearance

Clean and elegant, straw-colored with a greenish rim.

Nose

Noble aromas, which transmit its aromatic intensity from the expression of plants such as fennel, gorse and a delicate memory of chestnut blossom, with citrus notes and an attractive memory of wet rock.

Palate

In the mouth it appears big on the attack, fresh but voluptuous at the same time, fatty, which melts into a complex and fruity mid palate. Its finish is marked by the saline minerality of its soil that gives it the personality and character of a great wine.

Description

Made with grapes from our own vineyards, small plots of the Godello variety with an average age of 25 years, located at an altitude of over 600 meters and cultivated on sandy granite soils and sandy soils with clay sedimentation.

These plots are located in the municipality of O Bolo, in the districts of Chandoiro, Lentellais, Outardepregos and Santa Cruz do Bolo.

The main work in viticulture is the conduct of these vineyards towards a traditional and ecological work method, free of aggressive treatments for the plant and its soil. As a result, the expression of O Bolo's microclimate and its sandy granite soil take center stage in the "terroir" profile of the wine, thus highlighting its minerality and saline character.

The must ferments in 35 Hl Foudres. of French oak and remains aged on its fine lees for 4 months until bottling.
