Sede e Fame 2020 is a unique white wine that pays homage to the sanctuary of the Order of the Charismatics of the Hermitages, located in the Valdeorras region. The name, which means "thirst and hunger" in Galician, symbolizes the search for spiritual happiness, a concept also reflected in the winery's philosophy.
This wine is made exclusively from Palomino grapes from old vines located in four small plots in the As Ermitas area, at an altitude of 750 meters. The vineyards, planted on 20th-century stone terraces, face southeast and are cultivated in soils of decomposed granite sand and quartz schist. Viticulture is sustainable, respecting the environment and local traditions.
Winemaking begins with hand-pressing the whole bunches, followed by spontaneous fermentation in clay amphorae and oak barrels. The wine ages for 24 months in these same vessels, which imparts a unique complexity and character.
